Braised Brussel Sprouts in Mustard Sauce

- 1 lb Brussels sprouts
- 2 Tbs olive oil
- 1/3 cup shallots, minced
- salt, to taste
- pepper, to taste
- 5 Tbs water
- 1/4 cup whole grain mustard
- 2 Tbs maple syrup
Directions
Prep
- Trim brussels sprouts ends and cut each crosswise into thin strips, about 5 slices each.
- Mince shallots.
Make
- Place a large heavy skillet over medium heat. Add olive oil and swirl to coat the pan.
- Add shallots; sauté 2 minutes.
- Add brussels sprouts, pinch of salt, and 3 tablespoons of water. Spread evenly across the bottom of the pan.
- Reduce heat to medium-low, cover, and cook undisturbed for 5 minutes.
- While brussels sprouts cook, in a small bowl mix mustard, maple syrup, and 2 tablespoons water.
- After 5 minutes add mustard mixture to pan, stirring to coat evenly. Lower heat, cover pan, and cook undisturbed for 3 minutes more.
