Blueberry Oatmeal Blender Pancakes

Ingredients
- 2 cups rolled oats
- 1 1/4 cups unsweetened almond milk
- 1 banana, (brown/ripe)
- 1 tsp baking powder
- 1 Tbs ground flax
- 1 tsp cinnamon
- 1 cup blueberries, (frozen)
Directions
- Heat a cast-iron skillet over medium low heat.
- Add all ingredients except blueberries to a blender. Blend for 30-60 seconds until ingredients are well combined.
- Brush the skillet with oil (can also use butter/vegan butter) and pour in desired amount of batter to make pancakes. Top each with blueberries. Cook for 1-2 minutes (or until browned) then flip, repeating on the second side.
- Top pancakes with additional banana slices, blueberries, nut butter and/or a drizzle of maple syrup!
Notes:
These are naturally sweetened from the banana, but you can also add some maple syrup to the batter if you prefer them to be slightly sweeter or if your banana isn’t quite ripe.
