Watermelon Arugula Salad


4-5 ounces of baby arugula 

3 cups of seedless watermelon chunks 

1/3 cup of pine nuts 

1/2 cup of fresh mint leaves, loosely packed 

4-5 ounces of crumbled feta cheese

1-2 Tablespoons of lemon zest 

Juice of 2 lemons freshly squeezed 

1 Teaspoon of salt 

1/4 cup of olive oil 

Freshly ground pepper to taste 



Place watermelon chunks, arugula, pine nuts, mint and feta in a large bowl. Whisk the lemon juice, olive oil and salt together in a small bowl and pour over salad. Toss with tongs to combine. Sprinkle fresh lemon zest over the top and grind fresh pepper to taste. Enjoy!
