Spinach Puffs with Honey-Mustard Sauce
2–10-ounce packages of frozen chopped spinach
2 cups crushed herb-seasoned stuffing mix
1 cup grated Parmesan cheese
1/4 tsp of nutmeg
6 eggs, beaten
3/4 cup softened butter
- Thaw spinach, drain, and squeeze excess water
- Combine spinach with remaining ingredients
- Shape into 65 balls and refrigerate for 1+ hours (can make ahead)
- Bake 10-15 min at 350 degrees
- Serve with mustard sauce
Mustard Sauce
1/2 cup dry mustard
1/2 cup white vinegar
1/2 cup honey
2 egg yolks
- Combine mustard and vinegar in a bowl, and let stand overnight at room temperature
- Combine mustard mixture with honey and stirred egg yolk in a saucepan.
- Simmer until thickened, stirring occasionally
- Cool to room temp before serving
