Chicken Swiss Chard Chili
Ingredients:
2-3 Tbsp extra virgin olive oil
1 onion, chopped
3 cloves garlic crushed
1-2 jalapeno peppers, seeded and finely diced
2-3 boneless chicken breasts, chopped into small pieces
1 Tbsp ground cumin
1 Tbsp mild chili powder
1 tsp smoked paprika
2 cups tomato sauce
3 cups water
6 cups cooked pinto beans
2 teaspoons sea salt
2 bunches of chopped Swiss chard
Directions:
Heat 6 quart pot over medium heat. Add olive oil then onion and saute for 5-10 minutes or until onion is soft and beginning to change color. Add the garlic, jalapeno and chicken; saute for 2-3 minutes more. Add the cumin, chili powder and paprika and stir to coat veggies and chicken. Saute for a minute more. Add the tomato sauce, water, beans and salt. Stir, cover and simmer over medium-low heat for 45 minutes. When the chicken is tender and the flavors have melded, add the chard and simmer for 5 minutes more. Remove from heat, taste and adjust seasoning as necessary *Recipe from Nourishing Meals Cookbook
