Sweet Potato and Spinach Salad
1 5oz container spinach or power greens
2 large sweet potatoes peeled and chopped into 1″ chunks
1 cup walnut halves
1/2 cup olive oil, divided
1/4 cup all-natural maple syrup
1/4 tsp cinnamon
Sea salt to taste
Heat oven to 350.
Toss sweet potatoes with 1/4 cup olive oil, cinnamon, and salt to taste.
Roast for 30 minutes stirring once, let cool.
Meanwhile toast walnuts at 300 for 10 minutes.
Combine greens, cooked potatoes, and walnuts.
Toss with dressing and serve.
Dressing:
1/4 cup olive oil
1/4 cup maple syrup
Salt to taste
This is great with pork tenderloin!
