Sheet Pan Honey Balsamic Chicken and Brussel Sprouts
3-4 chicken breasts cut into smaller strips
1 pound brussel sprouts, cut in half lengthwise
3 Tbsp olive oil
1 tsp Italian seasoning
1 cup balsamic vinegar
4 Tbsp honey
½ tsp garlic powder
¼ tsp salt
Preheat Oven to 400 degrees. Combine chicken strips, brussel sprouts, olive oil, and Italian seasoning together in a bowl and then pour onto baking sheet lined with aluminum foil. Cook in oven for 20-25 until meat thermometer reads at least 140 for chicken. While chicken and brussel sprouts are in the oven, prepare the balsamaic glaze by adding balsamic vinegar to a sauce pan and heating on medium-high heat. Boil for 6-8 minutes or until reduced down to half volume. Remove from heat and then add honey, garlic powder, and salt. Once chicken is cooked thoroughly, drizzle balsamic glaze and broil for 3-4 minutes.
