4 cups rolled oats
2 cups roasted and salted pepitas
8oz chopped walnut pieces (or any other raw nuts)
1/2 cup olive or avocado oil
1/2 cup honey
2 egg whites
1 tsp sea salt
1 Tbsp cinnamon
1 tsp vanilla extract
Preheat oven to 300 degrees.
Combine olive oil, honey, egg whites, sea salt, cinnamon, and vanilla. Toss with remaining ingredients in a bowl.
Spead granola mixture on a baking sheet covered with parchment paper. Bake for 30-45 minutes, stirring occasionally, until beginning to be golden and browned. Turn off oven and let cool completely. You may need to crack the door to prevent burning.
Once cool, break into chunks and store in an airtight container. Use as a cereal or a topping on yogurt, cottage cheese, or salads.
