March is National Nutrition Month so let’s celebrate by going farther with food. One way to fuel your body better is to include nutrient-dense snacks. My favorite afternoon snack is one that is high in protein so that I stay more satiated during my time of the day when I am most hungry. Here is a snack that I can make ahead for me and my family to eat on during the week:
Peanut Butter Energy Bites
- 1 cup oatmeal
- ½ cup peanut butter
- 1/3 cup honey
- ½ cup chocolate chips
- ½ cup flaxseed
Mix all the ingredients together in a medium size bowl. Refrigerate mixture for 20-30 minutes or until chilled. Remove the mixture from the refrigerator and roll into small bite-size balls. Keep balls in the refrigerator until ready to eat.
