High Fiber Recipe: Eggs, Beans, and Greens
½ cup cooked beans
2 cup chopped bagged kale
¼ tsp sea salt
1 Tbs olive or avocado oil
Hot sauce if desired
Heat a skillet over medium heat. Add oil and swirl to cover the pan.
Add eggs and sprinkle with ½ the salt.
Add kale and sprinkle with remaining salt.
Cover the pan and wilt the kale for 1 minute.
Add the beans and cover the pan for 2 minutes.
Uncover, and scramble the mixture, breaking up the eggs and finishing the wilting of the greens.
Transfer to a bowl and top with hot sauce (if desired) before serving.
