Game Day Winners

 

Everyone agrees we just had the greatest game in Super Bowl history! I personally do not care for football, but I can get pretty excited about the food that accompanies the games. This year I put a healthy twist on two game day classics. So, in the aftermath of victory and defeat, I thought I would let you in on my personal game day winners!

The first dish I created on my own and I am honestly surprised how much my family loved it. Who doesn’t like pizza? But, I wanted to make a guilt-free version that didn’t leave me slaving in the kitchen. So, I decided to assemble little zucchini pizza bites, and I can assure you I will again!

I simply placed parchment paper on a baking sheet and covered it with a cooling rack. On top, I placed sliced zucchini rounds and topped each with a dollop of marinara sauce. No meat is necessary, but I played it safe with my meat-loving crowd and added a round of nitrite-free, naturally raised smoked sausage. Then, I topped the rounds with shredded mozzarella cheese and baked them for 10-15 minutes at 350 degrees. EASY, and delicious!

My other healthy comfort food was a salsa chicken taco salad. This shell-less creation used slow-cooker salsa chicken to top shredded lettuce with homemade guacamole, salsa, jalapenos, olives and cheese. My plate and my tummy were filled with lean protein, lettuce and lycopene-rich salsa. And, with no chips, fried foods, or bready crusts; I didn’t feel guilty about the healthy fats in guacamole and cheese.

Too often people fear that they cannot enjoy their favorite traditional foods and still have healthy celebrations. Sure you can! It just requires a little tweaking.
