Fresh Herb Grilled Chicken Tenderloins
Summer is a great time of year to use fresh herbs. No worries if you don’t have any, you can always substitute with dried herbs. Do you ever wonder how to substitute dry for fresh? Use the simple rule of 1Tbsp fresh to 1 tsp dried. Remember dried herbs are more concentrated and potent than fresh herbs.
Recipe:
2 pounds chicken tenders
1-2 lemons juiced
1 tbsp fresh thyme or 1 tsp dried
2 fresh tbsp oregano or 2 tsp dried
1 tbsp fresh rosemary or 1 tsp dried
1/2 tsp salt
1/2 tsp pepper
Marinate for 30 minutes – 2 hours (could also prep the night before and marinate overnight)
Preheat grill
Grill 4 minutes per side or until cooked through
Allow to rest for at least 5 minutes
Serve with vegetables and rice. Enjoy!
