One of the things that motivates me to want to make healthy choices at home is the scary statistics about heart disease and women. According to the American Heart Association, heart disease is the #1 killer among women. It will affect 1 in 3 women, which means that either myself or one of my 2 daughters will be affected by heart disease. The good news is that 80% of heart disease is preventable so making heart healthy choices can really make an impact.
I used to regularly serve steamed broccoli. As mother and a dietitian, I know all the wonderful benefits of broccoli including its rich nutrient content like vitamin C, folate, fiber, and potassium. The kids would grumble as I served it more frequently than they would like. Then, I decided to try a different approach to broccoli by roasting it. They absolutely love it and now that is one of the most requested sides with dinner. Here is our family favorite recipe:
Roasted Broccoli:
2 heads of broccoli florets
2 Tbsp olive oil
1 1/2 tsp minced fresh garlic or 2 tsp minced jar garlic
Preheat oven to 425. Cut broccoli into small florets and put in a large freezer bag. Add olive oil and garlic. Close freezer bag and shake well until broccoli is coated with olive oil and garlic. Put broccoli on a cookie sheet coated with non-stick spray and put in the preheated oven for 15 minutes or until broccoli is tender. Enjoy!
