Spring is right around the corner and many of us are looking for ways to tone up and maybe shed some of those holiday pounds. Limiting sugar is one great way to do that, but alas, for one reason or another, that sweet craving comes creeping in. We all want a little something sweet here and there, and by the way, that is totally normal! After all, what is life without enjoying a warm, fresh out of the oven chocolate chip cookie from time to time?
I have a better option for that cookie craving! Why not make your own from healthier, lower carb ingredients? These are the easiest and fastest cookies you will ever whip up and so satisfying, you will hardly know they are made with healthier ingredients! These can be stored in an airtight container for up to 3 days or frozen and thawed as needed.  Enjoy!
Chocolate Chip Cookies
Ingredients:
-3/4 cup creamy almond butter or peanut butter (Only nuts and salt in the ingredients list.)
-1/2 cup coconut sugar (Found on the sugar aisle in most grocery stores – lower glycemic index. May substitute brown sugar if you wish.)
-1 large egg
-2 teaspoons vanilla extract
-1/2 teaspoon baking soda
-1/4 teaspoon salt
-1/4 cup dark chocolate chips
Directions:
-Preheat oven to 350 degrees
-Line a large baking sheet with parchment paper
-Place all ingredients except chocolate chips in a mixing bowl and mix vigorously with a spoon
-Fold in chocolate chips
-Drop dough by tablespoonfuls on baking sheet and bake for 12 minutes
